Classic Sour-Spicy Version
Start with roughly 1 part soy sauce to 1 part vinegar plus a small amount of chili sauce. Mix the soy sauce and vinegar first, then add chili sauce for easier heat control. If the chili sauce is already salty, reduce the soy sauce.
Garlicky, Bolder Version
Along with soy sauce, vinegar, and chili sauce, add a little minced garlic and scallion. This works well with potstickers, chive dumplings, or strongly seasoned meat fillings, but avoid too much garlic so it does not cover the filling.
Lighter Version
For a lighter sauce, increase the vinegar and reduce the soy sauce, using chili sauce mainly for aroma and heat. A little hot water can also dilute the saltiness, especially for well-seasoned dumplings.
One Important Rule: Taste Your Chili Sauce First
Products differ greatly in saltiness, sweetness, and heat, so 1:1:1 is not a universal answer. Taste a tiny amount or dip one dumpling first, then adjust rather than copying a ratio blindly.
